Frijoles negros estilo cubano

Notes:
Nothing is more Cuban than white rice and black beans
Directions:
1.In a large bowl, soak beans in water, cover and leave overnight or for at least 8 hours.
2.Heat oil in a medium saucepan over medium heat, and saute onion, green bell pepper and garlic until tender.
3.Into the onion mixture, stir the drained beans, water, tomato paste, pimentos, and vinegar. Season with salt, a little bit of sugar, and pepper. Bring to a boil. Cover, reduce heat, and simmer 1 1/2 hours, stirring occasionally, until beans are tender. Ingredients: 1 - Pd. - Black beans, washed 3/4 Cup - Olive oil extra virgin 1 Large onion, cholled 1 Medium - Green bell pepper, chopped 6 Cloves - Garlic, peeled and minced 5 Cups - water 1 6 oz. - Can of tomato paste 1 4 oz. - jar diced pimentos, drained 1 tbsp. - vinegar 2 tsp. - salt 1 tsp. - white sugar 1 tsp. - black pepper
